Local Jerusalem artichokes are now in season. Despite the name, Jerusalem artichokes are not from Jerusalem and are not artichokes. They are the knobbly, edible tuber of a variety of sunflower.
Jerusalem artichokes are a fantastic source of iron and can be used in many different ways. Roasted, sautéed, dipped in batter and fried, puréed or made into soup… The only limit is your imagination!
